Bananas Foster Cupcakes

Rum and brown sugar cook together with bananas, creating a thick, caramel sauce that's both inside the cupcake and on top.

Bananas Foster Mixture
  1. Cook butter, brown sugar and cinnamon in large sauté pan on medium heat; stir until sugar dissolves.
  2. Add sliced bananas and cook until soft, approx. 5 minutes, stirring frequently.
  3. Remove from heat, add rum extract and reserve 1 cup of mixture for garnishing.
Batter
  1. Add remaining Bananas Foster Mixture, 2 1/2 cups water, vanilla extract and cake mix to mixer bowl fitted with paddle attachment.
  2. Combine on low speed for 30 seconds, then mix on medium speed for 2 minutes.
  3. Add remaining water slowly while mixing on low speed; mix an additional 2 minutes.
  4. Deposit #16 scoop of batter into greased or parchment-lined muffin pans.
  5. Bake as directed below and allow to cool completely.

*Rotate pans baked in convection oven one-half turn (180°) after 6 minutes of baking.
Icing
  1. Pipe 0.75 oz icing onto completely cooled cupcakes.
  2. Place 1 piece of banana from reserved Bananas Foster Mixture on top of each cupcake and serve.
