Zucchini and Cinnamon Smoothie

Yoplait® ParfaitPro® Lowfat Vanilla Yogurt is blended with applesauce, cinnamon, nutmeg and zucchini for a veggie-fruit combo smoothie.

Applesauce, unsweetened, chilled

Zucchini, fresh, unpeeled, sliced, chilled*

  1. Place approx. 1/4 bag of yogurt, 2 cups of applesauce, 3 Tbsp of cinnamon and 2 tsp of nutmeg in a large capacity blender.
  2. Add 1/4 of the zucchini and blend until smooth. Scrape down inside of blender with a rubber spatula.
  3. Pour smoothie mixture into an 8 quart measurement-marked food storage container.
  4. Repeat process until all ingredients have been used. Stir until well mixed.
  5. Verify that the smoothie mixture yields 6 quarts (this ensures that each serving will contain 1/2 cup of other vegetable subgroup). If necessary, puree additional zucchini to meet the 24 cup total yield and stir into smoothie mixture.
  6. Portion 12 ounces into a 12 or 14 ounce serving cup. Fill remaining cups using portioned one as a visual guide.
  7. Place lids on cups and serve chilled. Refrigerate if not serving immediately. Smoothies may also be refrigerated overnight.
