Salmon en Pappilote

An updated version of the sophisticated dish offers salmon and veggies wrapped in whole-grain dough, baked in parchment.

Salmon fillets, raw, grilled marked

Carrots, fresh, fine julienne

Onions, fine julienne

Salt-free seasoning

  1. Thaw and cover biscuit dough on parchment-lined sheet pan for at least 3 hours under refrigeration; cut each biscuit in half.
  2. Roll out each biscuit half on a flour-dusted surface, to a round piece 1/8-inch thick using a flour-dusted rolling pin.
  3. Place salmon fillet over the biscuit dough in the center of the circle.
  4. Layer on 0.5 oz each of carrots and onions and sprinkle 1/2 tsp of salt free seasoning on top.
  5. Fold one side and both ends of dough over salmon and vegetables.
  6. Brush remaining dough with melted margarine and fold on top to close seams.
  7. Place salmon wrapped pieces, seam side down, on a parchment lined sheet pan with 2-inch interval in between pieces and bake as directed below.
