Gluten-Free Curried Chicken Breasts

Creamy curry is gluten-free and filled with bold favors. Chicken breasts marinate in a Yoplait® ParfaitPro® Lowfat Vanilla Yogurt sauce rich in curry powder, ginger and red peppers before baking.

Yogurt Baking Marinade

  1. Mix yogurt, garlic, curry, ginger, salt and ground red pepper in mixing bowl with whisk.
  2. Cook onions and butter in large skillet until soft and caramelized; cool and add to yogurt mixture.
  3. Arrange chicken evenly in 5 steam table pans; top each breast with yogurt mixture.
  4. Cover with plastic wrap and promptly chill 8 to 24 hours.
  5. Remove plastic wrap and bake until thermometer placed in center of each chicken breast reads 165°F; serve hot.
